I use the app on my iOS devices and it's wonderful there, but on the mac, there are tons upon tons of unlabeled buttons, and not as many shortcut keys as on the Windows side of things. Unfortunately, you are not going to have a good experience with this at all! Not, that is, unless someone knows one heck of a trick I don't know, at which point, I'd love you for ever if someone can tell me. I see you wrote back saying, "Anyone?" Finally, since I'm guessing you'd be getting an Apple Silicon app, you have the option of side loading the iOS app, though since Sonos blocked it from being installed you'll need to do it before you update Mac OS to 11.3 which killed side loading unlisted apps, and I can confirm that this works pretty well and lets you have full control over the speaker. For Apple Music, you can use Airplay to play to your system from the music app. Spotify for instance has the Spotify connect feature that lets you control Sonos from any of their apps, and this works great. That being said, this isn't as much of a problem depending on what services you want to use. The most serious issue however is that the browser lists that let you navigate your library or the play queue are completely invisible to VoiceOver, so while the app does kinda work if you want to control playback with media keys, starting music from it is pretty much impossible, and I wouldn't expect this to change any time soon considering Sonos has been focusing more on mobile in general, with both the Windows and Mac desktop apps losing some of the more advanced speaker control features some time ago.
